Pan Fried Turkey Breast Fillet with Apples and Colcannon
Ingredients:
Method:
  1. Cook the potatoes in boiling water for about 15 minutes or until very soft. Drain well, and mash. Add the milk, half the butter, whip with a wooden spoon until smooth
  2. Cook the cabbage in boiling water for about 2 minutes, drain well. Add to potato mixture with the shallots, mix well. Season with salt and pepper. Cover and keep warm
  3. Lightly pound turkey with a meat mallet. Combine the flour and cinnamon on large plate, season with salt and pepper. Dust turkey steaks with flour mixture
  4. Melt half remaining butter in a frying pan over medium heat. Brown the turkey in batches. Remove from pan, set aside
  5. Add remaining butter to pan. Add apples and gently fry until golden. Return turkey to pan, increase heat. Pour in cider, add mustard and jus. Bring to boil, and gently boil until sauce is a little syrupy and turkey has cooked through. Serve with Colcannon
