Roasted Garlic Hummus
  1. CUT the top off the garlic and place on a baking tray, drizzle with half of the oil and bake in a moderate oven 180°C for 30 minutes or until softened. Cool then squeeze garlic from the skin
  2. HEAT the remaining oil in a small saucepan and cook the spices over a low heat for 1-2 minutes or until fragrant. Add the chickpeas and cook a further minute
  3. TRANSFER to a food processor with the garlic, PHILLY, chilli sauce and seasonings and process until smooth. Spoon into a serving bowl. Chill. Serve with toasted bread
