Vietnamese Style Beef Noodle Soup
  1. HEAT the oil in a stockpot and brown the meat on both sides. Remove and keep warm. Add the onion, white spring onions, ginger, garlic and chilli and cook gently for 10 minutes
  2. STIR in the water, VEGEMITE, sugar, hoisin sauce and spices; bring to the boil, reduce the heat and simmer for 20 minutes
  3. INCREASE the heat; add the noodles and boil for 6-8 minutes or until the noodles are cooked
  4. THINLY slice the steak then add with the spring onion tops to the soup, season to taste. Ladle into serving bowls and serve with the combined mint and cucumber and a squeeze of lime. Serve immediately
