These delicious bars are the perfect chocolate coated treat for all to enjoy! These 94% sugar-free Raw Salted Caramel Mars Bars are not only incredibly tasty, but are extremely easy to make with no baking required

Base

Ingredients

  • 1 cup raw cashews or walnuts
  • 8 medjool dates
  • 1 tsp almond essence


Method

  1. Line a 20 x 20cm square baking pan with baking paper
  2. To make the crust - in a food processor, combine the cashews (or walnuts), dates, and 1 teaspoon almond essence. Pulse until finely ground.
  3. Press the mixture into the prepared pan.


Filling

Ingredients

  • 1 1/2 cups creamy peanut butter
  • 5 tbsp Classic Bakers Syrup
  • 1 tsp almond essence
  • 1 pinch salt


Method

  1. In a medium bowl, mix together the peanut butter, Bakers Classic Syrup and almond essence. Mix until smooth. Spread the mixture over the crust.
  2. Transfer to the freezer and freeze until firm, at least 1 hour.
  3. Once frozen, cut into 16 bars and arrange on a parchment lined baking sheet. Return to the freezer until frozen solid, at least 2 hours, preferably overnight.


Finishing/Topping

Ingredients

  • 340g Lakanto Dark Chocolate Baking Bits (Lakanto Chocolate Crumb)
  • 1 tbsp Coconut Oil


Method

  1. Melt the chocolate and coconut oil together in the microwave until melted and smooth stir gently frequently. Alternatively place into a medium metal bowl or heat resistant glass bowl and melt over a small pot with hot water stir continuously until smooth.
  2. Allow the chocolate to cool slightly for approximately 10 minutes.
  3. Remove the bars from the freezer and place onto a wire rack. Using a tablespoon cover each bar with the chocolate and sprinkle with chopped nuts (optional).
  4. Immediately put the bars into the refrigerator to set the chocolate approx. 20 minutes.
  5. Keep refrigerated and stored in an airtight container. Keep for 1-2 weeks


Tips & Hints

  1. Add roasted peanuts, chopped or sea salt for sprinkling over the chocolate topping.
  2. Turn these bars into Choc Pops! Insert a skewer or popsicle stick into the bar before it freezes then follow (finishing/topping method) and place back in the freezer for a snack!!!
