Ingredients
2 tablespoons Lakanto Caramel Topping with Monkfruit Sweetener
1 shot espresso cooled
1/2 cup almond milk (or milk of your choice)
Tiny pinch of salt
1-2 drops vanilla essence
Optional: additional caramel topping and kosher salt/sea salt for rim
Method
To make the salted caramel rim (optional): pour 1 tablespoon of Lakanto Caramel Topping onto a shallow plate. Dip the rim of the glass into the topping and work your way around until the whole rim is covered. Place a small amount of salt on a shallow plate and dip the caramel covered rim into the salt. Don't use too much - you only need a little! Place the glass into the freezer until you're ready to serve.
Place remaining topping, espresso, milk and vanilla essence into a blender and blend well.
