Free from refined sugars, this delicious banana bread is a delicious yet healthy treat! Made from mashed ripened bananas, walnuts and cinnamon, the flavour profile of this treat will be enjoyed by everyone.
Ingredients
Coconut oil cooking spray
2 cups almond meal
1/2 tsp ground cinnamon, plus extra for garnish
1 1/2 tsp bi-carb soda
1/2 tsp salt
3 eggs
3/4 cup melted coconut oil
1/3 cup Lakanto Monkfruit Golden Sweetener
1 tsp vanilla extract
1 1/2 cups mashed ripe bananas, plus one whole, split in half lengthways
3/4 cup chopped walnuts
Method
Preheat oven to 170ºC/150ºC fan-forced. Grease a 23cm x 12cm loaf pan with cooking spray and set aside.
Place almond meal, cinnamon, bi carbonate soda and salt in a medium mixing bowl and mix well.
In a separate large bowl, beat eggs, coconut oil, Monkfruit Golden Sweetener and vanilla together until well combined. Stir in the mashed banana and mix well.
Fold through almond meal mixture and chopped walnuts until evenly combined throughout the mixture.
Pour mixture into prepared loaf pan. Sprinkle the top with a little more cinnamon and arrange sliced banana over the top. Bake for 50-55 minutes or until a skewer inserted comes out clean.
Stand in tin for 10 minutes. Transfer to a wire cake rack to cool.
