A classic blend of the best mocktail ingredients rolled into one. Good to go, this mocktail is the perfect balance of sweet without sugar, bubbly, and citrus freshness, accentuated by a delightful mild ginger touch.
Lakanto Classic Simple Syrup
Ingredients
30g Classic Monkfruit Sweetener
5g cornflour
90ml water
Method
Blend the monkfruit sweetener in a blender for about 30 seconds until it resembles icing powder.
In a small saucepan, combine sweetener, cornflour and water over low heat. Stir gently until the sweetener and cornflour dissolves. Keep the heat low and don’t let the mixture boil.
Chill the simple syrup in the fridge until ready to use. You will have enough for 3-4 drinks.
Mocktail
Ingredients
2cm grated ginger
4cm grated Lebanese cucumber
1 tablespoon fresh lime juice
8 mint leaves
200mL soda water
Method
Muddle ginger, cucumber and lime in a bowl or jug. If you don’t have a muddler, you can use the back end of a wooden spoon or similar.
Clap mint together in your hands until the scent is released, then add to the mixture. Press the mint gently with the muddler a few times.
Using a small strainer, strain the mixture into a glass. Press down on the mixture so all juices are released.
Add simple syrup (made earlier) to the mixture and stir.
Add ice and top with soda water. Adjust sweetness by adding more simple syrup if you wish. Stir, garnish and serve.

WE HAVE REPLACED THE TRADITIONAL SUGAR INGREDIENT WITH LAKANTO, SO THIS RECIPE NOW HAS 95% LESS SUGAR.
