Nothing says 'It's Spring' like some vibrant and refreshing fruity flavours, perfect for welcoming in the warmer weather! This refreshing smoothie combines pineapple and maple flavours for a delightful amount of healthy, no added sugar sweetness.
Ingredients
2 cups (320g) Pineapple Chunks
8 mint leaves
6-8 tbsp Lakanto Maple Syrup (adjust to taste to suit your preference and sweetness of your pineapple)
1 cup of Water Kefir OR Kombucha OR Coconut Water
1/2 cup of water
2 heaped tbsp of Collagen Powder
2 cups of ice
Extra Maple Syrup to drizzle
Extra mint, dried or fresh pineapple to decorate
Method
Place all ingredients into a blender and blender on high until there are no chunks, taste and add more syrup if needed
Pour into glasses and top with a mint spring, fresh or dried pineapple and a drizzle of maple syrup and enjoy!
Tips & Hints
Swap the 1/2 cup of water for 1/2 cup of coconut milk for a creamy tropical twist
Add in a squeeze of lime juice and a 1tsp of fresh ginger for some extra zing!
Keto option: Use all water
Vegan option: Omit the collagen or use vegan collagen
