Experience the bold and fiery flavors of authentic Mexican cuisine with this easy-to-make Chipotle Salsa. Made with smoky chipotle peppers in adobo sauce, diced tomatoes, and a medley of aromatic spices, this traditional dip will transport you to the heart of Mexico.

Ingredients

  • ¼ cup chillies in adobo sauce
  • 210g can diced tomatoes
  • 2 large finely chopped tomatoes
  • 1 small white onion, very finely chopped
  • ½ tsp ground cumin
  • 2 tbsp lime juice
  • 1 green chilli, seeded, finely chopped
  • 2 tbsp chopped coriander


Method

  1. Combine all ingredients in a bowl. Season with salt and pepper.


Tips & Hints

  1. Serve chipotle salsa simply as a dip with corn chips. Or serve as a sauce with any roasted or pulled meats such as pork, chicken or beef.
  2. Chipotle salsa can be made 1-2 day inadvance. Store in an airtight container and refrigerate. Always taste and adjust seasoning and acidity before serving
  3. Leftover salsa can be refrigerated for up to 5 days
