Experience the vibrant flavours of Mexico with this authentic Corn Salsa! Whether served as a dip or a side, this traditional Mexican salsa will add a burst of flavour to any meal, with ingredients like juicy corn kernels, finely chopped red onion, and a touch of spicy green chilli.

Ingredients

  • 420g can drained corn kernels
  • ½ small finely chopped red onion
  • ½ green chilli finely chopped
  • 2 tbsp chopped coriander
  • Fresh lime juice and extra virgin olive oil


Method

  1. Combine all ingredients in a bowl. Squeeze with lime juice, season with salt and drizzle with olive oil.


Tips & Hints

  1. This salsa is perfect with chicken, fish or for your next taco night. Use fresh corn when in season. Cook on a hot BBQ until evenly charred. Cool and cut off kernels. Toss with remaining ingredients.
  2. Salsa can be made a few days in advance but omit coriander. Add coriander an hour before serving. Store leftover in a sealed container for 1-2 days.
