This Sticky Toffee Pudding is the perfect warming dessert pudding for this winter. With its moist texture and a lashing of sugar free toffee sauce, you're sure to love this incredible, easy to make treat.
Cake
Ingredients
1 packet Lakanto Vanilla Cup Cake Mix
4 tbsp Lakanto Brown Monkfruit Sweetener
2 large eggs
1 large egg yolk
160g unsalted butter, melted and cooled
Coconut oil spray
4-5 tbsp warm water or milk
Method
Preheat the oven to 140c.
Prepare 6 individual pudding moulds by spraying with coconut oil.
In a medium sized bowl whisk the eggs and milk.
Whisk the melted butter into the eggs.
Add the Lakanto Vanilla Cup Cake Mix and combine until it forms a smooth batter.
Spoon the mixture into the individual pudding moulds and cover with clingfilm.
Place the puddings into the middle shelf of the oven, on a tray with an inch of water in the base. Cook for 60-65 minutes at 140c, ensuring they're cooked by checking with a skewer.
Toffee Sauce
Ingredients
1/4 cup Lakanto Brown Monkfruit Sweetener
50g unsalted Butter
½ cup double cream
Method
Melt the butter in a small pot until it turns into a golden brown colour.
Add the Lakanto brown sweetener to the pot and boil until it bubbles. Add the double cream and reduce the heat until thickened.
Pour the toffee sauce over the pudding before serving. Enjoy!
