Donuts

Ingredients

  • 1-2 bananas mashed
  • 1/2 cup Lakanto Monkfruit Brown Sweetener
  • 1 whole egg
  • 1 tsp vanilla extract
  • 1/4 cup melted butter
  • 2/3 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp cinnamon


Method

  1. Preheat oven to 180c. Spray donut pan with nonstick cooking spray and place into the oven for 5 minutes.
  2. In a medium bowl, beat together the bananas, brown sweetener, egg, vanilla, and melted butter until well combined.
  3. In a small bowl, combine the flour, baking powder, salt, and cinnamon.
  4. Stir the dry ingredients into the wet ingredients until just combined.
  5. Spoon the batter into the donut pan and bake for 14 minutes.
  6. Let cool for 5 minutes before removing from the pan.


Glaze

Ingredients

  • 1/2 cup Lakanto Icing Powder
  • 2 tbsp water
  • 3 tbsp peanut butter
  • 20g banana chips


Method

  1. Warm the peanut butter if necessary to achieve a silky texture.
  2. Combine the icing powder, water, and peanut butter until it reaches a soft and smooth consistency.
  3. Generously drizzle this delectable glaze over the freshly baked donuts and indulge in their irresistible sweetness. Top with a couple of banana chips and serve.
