Ingredients
1 tbsp vegetable oil
450g pork fillet, sliced
½ Cup (150g) mixed vegetables (carrot disks and green beans)
400ml can Coconut Milk
200g Passage to Asia Red Thai curry simmer sauce
Steamed Jasmine Rice to serve
Sliced red chilli and Thai Basil for garnish (optional)
Method
Heat vegetable oil in a wok. Brown pork in 2 batches on high in medium frypan for 2- 3 minutes.
Add vegetables and coconut milk and cook for 1-2 minutes.
Add simmer sauce, bring sauce to a simmer, reduce heat, cover and cook for 10-15 minutes or until meat is cooked.
