Ingredients

  • 1 tbsp vegetable oil
  • 450g pork fillet, sliced
  • ½ Cup (150g) mixed vegetables (carrot disks and green beans)
  • 400ml can Coconut Milk
  • 200g Passage to Asia Red Thai curry simmer sauce
  • Steamed Jasmine Rice to serve
  • Sliced red chilli and Thai Basil for garnish (optional)


Method

  1. Heat vegetable oil in a wok. Brown pork in 2 batches on high in medium frypan for 2- 3 minutes.
  2. Add vegetables and coconut milk and cook for 1-2 minutes.
  3. Add simmer sauce, bring sauce to a simmer, reduce heat, cover and cook for 10-15 minutes or until meat is cooked.
  4. Serve with cooked rice and garnish.
