Try this delightful Chow Mein with Fried Eggs recipe for a satisfying and flavorful meal! Sautéed pork, vegetables, and noodles coated in a delectable sauce, finished with a perfectly crispy fried egg and a garnish of fresh bean sprouts. Absolutely delicious!

Chow Mein Sauce

Ingredients

  • 1 tbsp cornflour
  • ⅓ cup soy sauce
  • ¼ cup Chinese cooking wine or mirin
  • 3 tsp white sugar
  • 1 tsp sesame oil
  • ⅓ cup oyster sauce


Method

  1. For the sauce, combine the cornflour and soy in a large jug, whisk until smooth.
  2. Add the remaining sauce ingredients, mix well and set aside.


Chow Mein and Fried Egg

Ingredients

  • 2 tbsp vegetable oil
  • 400g pork mince
  • 1 large carrot, peeled, cut into matchsticks
  • ½ wombok or 1 bambino wombok heart, shredded (4 cups)
  • 4 green onions, thinly sliced
  • 125g green beans, cut into 2cm lengths
  • 300g fresh chow mein noodles (see tip)
  • 1 cup bean sprouts, trimmed
  • 4 eggs
  • Fried shallots, to serve


Method

  1. Heat a large, wok or non-stick frying pan over a high heat until hot. Add 1 tablespoon oil and pork mince. Stir fry 4 minutes, breaking up mince until cooked through. Add 3 tablespoons (1/4 cup) of the sauce mixture. Stir fry for a few extra minutes until pork is well coated.
  2. Add the carrot, wombok, beans and green onions. Stir fry 1-2 minutes until wombok is wilted.
  3. Add noodles and remaining sauce. Stir-fry for 2-3 minutes or until noodles are heated through and sauce has coated noodles.
  4. Meanwhile, heat remaining oil in a large, non-stick frying pan over medium heat. Crack the eggs into the pan, fry 3-4 minutes until cooked to your liking.
  5. Spoon Chow Mein into serving bowls, sprinkle with bean sprouts, top with fried egg. Sprinkle with fried shallots. Serve.


Tips & Hints

  1. Prepare noodles following packet directions. Drain well. Find fresh chow mein noodles in the refrigerated section in supermarkets and Asian grocers.
