Super simple Peking Duck pancake recipe to enjoy as a dinner, party starter or to celebrate Chinese New Year.

Ingredients

  • 375g pkt Peking Roast Duck Breast (Luv A Duck)
  • 400g Creative Gourmet frozen Crepes
  • 3 green onions (shallots), trimmed
  • 2 medium Lebanese cucumbers
  • Hoisin sauce, warmed, to serve


Method

  1. Preheat oven to 180°C/160°C fan-forced. Place duck breasts onto a baking tray lined with non-stick baking paper. Drizzle with any remaining marinade in packet. Heat in the oven for 10-12 minutes until hot
  2. Meanwhile, cut green onions into 12cm long thin strips. Halve cucumbers lengthways, remove seeds and cut lengthways into 12cm long thin strips
  3. To serve, warm crepes as per packet instructions. Thinly slice duck breasts. Divide ingredients evenly, top each crepe with sliced duck, green onions, cucumbers and drizzle with hoisin sauce. Wrap and serve


Tips & Hints

  1. LUV-A-DUCK brand vaccum-packaged Peking Roast Duck Breast is available from large supermarkets and some butchers
  2. If preferred, replace the duck with shredded barbecued chicken flesh. Add coriander leaves to the crepe filling for extra flavour
