Red carrot, cherry tomato & cashew salad
Ingredients
- 1 punnet ripe cherry tomatoes
- 1 tin organic red kidney beans, drained
- 1/3 cup unsalted raw cashews
- 1 red carrot (peeled and grated) or 1 medium beetroot (peeled and grated)
- Juice of 1/2 a lemon
- A dash of balsamic vinegar
- Lettuce, for serving
