Gluten-free Christmas pudding
Ingredients
- 100g dates, pitted & finely chopped
- 150g prunes, pitted & finely chopped
- 100ml port
- 50g safflower oil
- 40g stevia (Natvia brand works well)
- 1 large free range egg, beaten
- 1/2 tsp vanilla essence
- 1 medium carrot, finely grated
- 1 lemon, grated zest only
- 1 tsp gluten free baking powder
- 40g almond meal
- 50g buckwheat flour
- 1 heaped tsp cinnamon (or more, to taste)
- 1/2 tsp nutmeg (or more, to taste)
