Gluten-free Christmas pudding

Ingredients

  • 100g dates, pitted & finely chopped
  • 150g prunes, pitted & finely chopped
  • 100ml port
  • 50g safflower oil
  • 40g stevia (Natvia brand works well)
  • 1 large free range egg, beaten
  • 1/2 tsp vanilla essence
  • 1 medium carrot, finely grated
  • 1 lemon, grated zest only
  • 1 tsp gluten free baking powder
  • 40g almond meal
  • 50g buckwheat flour
  • 1 heaped tsp cinnamon (or more, to taste)
  • 1/2 tsp nutmeg (or more, to taste)


Method

  1. Mix together the dates, prunes and port in small bowl and set aside In a separate small bowl, whisk together the oil, stevia, egg and vanilla.
  2. Put all remaining ingredients in a large mixing bowl Then add in the fruit mixture and the oil mixture and stir until combined and there are no lumps Cover and refrigerate overnight.
  3. Spoon batter into a small pudding basin lined with greaseproof paper, cover with a pleated piece of foil and secure with string tied just under the lip of the basin. Then place the basin in a large saucepan and fill with water until it is about 1/2 way up the side of the basin. Steam with the lid on for for 3-4 hours, ensuring that the pan does not boil dry.


Tips & Hints

  1. Serve warm or cold with cream, icrecream, brandy sauce or whatever else takes your fancy.
