Buckwheat blueberry protein pikelets

Ingredients

  • 2 whole eggs (or four eggwhites if you're avoiding yolks)
  • 1 cup buckwheat flour
  • 1/2 cup (or so) unsweetened berry fruit juice
  • 1 scoop vanilla protein powder or Juice PLUS *‘Complete’
  • A dash of vanilla essence
  • 1 tsp baking powder
  • 1 cup fresh or frozen blueberries


Method

  1. Combine all ingredients except the blueberries in a medium sized mixing bowl and stir (or beat with an eggbeater) until mixture is smooth. Then stir in the blueberries Cook dessert-spoon sized blobs of the batter in a non-stick pan over a medium heat, with a tad of healthy oil (eg coconut or macadamia oil) to stop them sticking. Flip over when bubbles appear on the surface of each pikelet


Tips & Hints

  1. Use a high quality protein powder or meal-replacement powder like Juice PLUS+ ‘Complete’
