1 large carrot, peeled and grated (or cut with a spiral cutter)
Method
Place vermicelli in a heatproof bowl and pour over enough boiling water to completely cover the noodles. Let sit for 5-10 minutes (depending on the thickness of the noodles) until noodles have softened. Drain, rinse with cold water, drain again, and put in a covered bowl in the fridge. Prepare other vegetables and put in the fridge, covered
Dressing
Ingredients
Juice of 1 ripe lemon
2 tbs unsweetened orange juice
1/2 tbs extra virgin olive oil
1/2 tsp chilli powder (or to taste)
1 tbs maple syrup
12-15 young, fresh mint leaves, finely shredded
Method
Combine all dressing ingredients except the oil in a small bowl, then gradually whisk in the oil using a handheld whisk or fork. Combine cooled noodles, vegetables and dressing in a bowl and chill before serving Garnish with a little extra mint
