Tortilla Muffin
Ingredients
6 x cooked chat potatoes (try roasting the potatoes for a little extra flavour)
1 x large Spanish onion, sliced
5 eggs
1 cup grated Manchego* cheese
1/2 cup cream
Salt and pepper (to taste)
Method
Pre-heat the oven to 190°C on fan-grill function
Grease a 6 mould muffin tray
Cut the potatoes in half and place 2 halves in each mould
Saute the onion with a little olive oil Cook until slightly brown and set aside
Place sautéed onions with a good pinch of cheese in the mould. Fill about two thirds of the muffin mould.
Mix eggs, cream, salt and pepper together in a bowl.
Carefully pour egg mixture into each mould to cover the vegetables.
Bake for about 18 minutes or until risen and golden brown on top.
Tips & Hints
Manchego cheese is a well known sheeps milk cheese from Spain
