Tortilla Muffin

Ingredients

  • 6 x cooked chat potatoes (try roasting the potatoes for a little extra flavour)
  • 1 x large Spanish onion, sliced
  • 5 eggs
  • 1 cup grated Manchego* cheese
  • 1/2 cup cream
  • Salt and pepper (to taste)


Method

  1. Pre-heat the oven to 190°C on fan-grill function
  2. Grease a 6 mould muffin tray
  3. Cut the potatoes in half and place 2 halves in each mould
  4. Saute the onion with a little olive oil Cook until slightly brown and set aside
  5. Place sautéed onions with a good pinch of cheese in the mould. Fill about two thirds of the muffin mould.
  6. Mix eggs, cream, salt and pepper together in a bowl.
  7. Carefully pour egg mixture into each mould to cover the vegetables.
  8. Bake for about 18 minutes or until risen and golden brown on top.


Tips & Hints

  1. Manchego cheese is a well known sheeps milk cheese from Spain
