Garlic & Chilli Mussels
Ingredients
1 kg bag local Mussels, washed and drained
2 tablespoons of olive oil
6 garlic cloves, crushed
1 large chili, finely sliced
1/2 cup white wine
3/4 cup thickened cream
1/2 cup parsley, chopped
Method
Heat oil in a heavy-based fry pan on medium heat
Saute garlic until lightly brown then add in the chilli
Increase heat level to high and add the mussels and stir gently
Deglaze the pan with white wine
Cover with a lid and reduce heat to medium and cook for 4 minutes (until shells open)
Remove lid and stir in the cream
Season the sauce with salt and pepper
Cook for a further 3 minutes to reduce the sauce - stirring occasionally
Serve with crusty bread
