Tasty Cheese And Olive Damper

Ingredients

  • 2 cups of self-raising flour
  • 1 cup tasty cheese, grated
  • 1 tablespoon fresh chives (snipped)
  • 1 teaspoon of paprika
  • 1/4 cup olives, chopped
  • 1/4 cup sun-dried tomatoes
  • 1 cup buttermilk or milk
  • 1 tablespoon of olive or vegetable oil
  • 60g parmesan, grated


Method

  1. Preheat oven to 180°C if cooking the damper on the traditional cooking function, or 160°C if using the fan forced cooking function
  2. Sift flour into a large bowl
  3. Combine flour, tasty cheese, chives, paprika and olives (save a few olives the top of the damper)
  4. Make a well in the centre of flour mixture; add milk and oil and mix to form a soft dough
  5. Turn dough onto lightly floured surface and knead until smooth
  6. Roll into a large ball, flatten slightly and place on a lightly greased baking tray
  7. Sprinkle Parmesan, and remaining olives
  8. Bake for 40 minutes or until risen and golden


Tips & Hints

  1. For the filling, choose any combination you like! Try Feta sun-dried tomatoes and basil, or blue cheese and walnuts.
