Moroccan Chicken Kebabs with Tatziki

Chicken

Ingredients

  • 6 chicken thigh fillets
  • 3 tablespoons Moroccan seasoning
  • 2 tablespoons of olive oil
  • Salt and pepper
  • 2 sprigs of fresh coriander, chopped (for decoration)


Method

  1. Soak 6 skewers in water
  2. Preheat oven to 200°C on fan grill function
  3. Trim the chicken of any fat and sinew and cut into 2cm cubes
  4. Mix all the other ingredients in a large bowl
  5. Add trimmed chicken to bowl of spices and coat generously
  6. Skewer chicken pieces
  7. Place onto a lightly sprayed grill rack with baking paper underneath
  8. Grill for approximately 10 minutes or until brown and cooked through


Tatziki

Ingredients

  • 250g plain yogurt
  • 1 large sprig of fresh mint, roughly chopped
  • 1/2 cucumber, finely diced
  • Salt and pepper to taste


Method

  1. Mix all ingredients together and season to taste
