Moroccan Chicken Kebabs with Tatziki

Chicken
Ingredients
6 chicken thigh fillets
3 tablespoons Moroccan seasoning
2 tablespoons of olive oil
Salt and pepper
2 sprigs of fresh coriander, chopped (for decoration)
Method
Soak 6 skewers in water
Preheat oven to 200°C on fan grill function
Trim the chicken of any fat and sinew and cut into 2cm cubes
Mix all the other ingredients in a large bowl
Add trimmed chicken to bowl of spices and coat generously
Skewer chicken pieces
Place onto a lightly sprayed grill rack with baking paper underneath
Grill for approximately 10 minutes or until brown and cooked through
Tatziki
Ingredients
250g plain yogurt
1 large sprig of fresh mint, roughly chopped
1/2 cucumber, finely diced
Salt and pepper to taste
Method
Mix all ingredients together and season to taste
