Miso Sauce
Ingredients
3 tbsn red miso
1 tbsn honey
1 tbsn cooking sake - ryorishu
2 tbsn mirin
(Japanese ingredients available from Chef's Armoury)
Method
Add miso, honey, sake, mirin to a small pot
stir ingredients together over a medium heat until well combined
when the mixture has a smooth consistency, take off heat and set aside
You can add a little water if the mixture is too thick
Tips & Hints
Use a high quality red miso, This is an excellent dish to serve over a bowl of rice.
Pork Fillet
Ingredients
1/2 of a pork fillet
vegetable oil
Method
Trim sinew from pork fillet and butterfly lengthways
Heat a heavy pan over medium/high heat
Oil and season the pork fillet and add to pan
Turn and cook to your desired doneness
Let the pork rest for 5 minutes in a warm spot and then slice
Serve with the warm miso mixture spooned over the top
