French Toast Recipe: Coconut brioche

French Toast
Ingredients
1/3 cup milk
2 eggs
2 thick slices of coconut brioche loaf (one inch thick slices)
butter for pan
Method
Beat eggs and milk together with a fork and put in a shallow bowl
Dip each side of the bread in the egg mixture until well coated
Preheat Naked Pan cast iron pan on medium heat and add butter
Add bread to pan when butter is bubbling
Cook until bottom is golden brown (2 - 3 mins) and flip over
Cook second side until brown and transfer to plate
Serve with glazed strawberries and maple syrup
Glazed Strawberries
Ingredients
5 large strawberries
small bowl of caster sugar
Method
Cut strawberries in half lengthways leaving green stems on
Preheat a Naked Pan on low to medium heat
Oil lightly with a neutral oil and a paper towl
Dip cut side of strawberries into caster sugar
Place strawberries cut side down onto pan
Increase heat and cook until the sugar caramelises
When the sugar caramelizes turn off the heat, flip strawberries over in pan and immediately remove them from the pan
Set aside for French toast
Tips & Hints
You can buy coconut brioche at many Asian bakeries eg Breadtop, If you can't find coconut brioche, replace with a plain brioche or white bread.
