Miso Soup

Ingredients

  • 4 x scampi
  • 800ml premade dashi stock
  • 1 x heaped tbsn white miso
  • 1 x heaped tbsn red miso
  • Japanese ingredients available from Chef's Armoury


Method

  1. Bring dashi stock to a simmer
  2. Wash scampi thoroughly in fresh water
  3. Cook scampi in dashi stock for 3 - 4 minutes depending on size
  4. Take scampi out and put in cold water
  5. Reserve dashi stock for soup
  6. Skim any foam from the top of the dashi
  7. Bring dashi to a simmer
  8. Stir through white and red miso being careful not to boil
  9. Remove underbelly section of the scampi using a pair of kitchen scissors and place one in each miso bowl
  10. Strain the miso soup and divide evenly amongst four boils
  11. Add sliced negi / shallots
  12. Serve immediately


Tips & Hints

  1. Never let the miso soup boil, Buy scampi without any black colour in the head
