Vegetarian Frittata

Ingredients

  • 5 eggs
  • 100ml milk
  • 2 medium sized boiled potatoes in half centimetre slices
  • 1/2 cup caramelised onions (see separate recipe)
  • handful of wild rocket
  • 8 halves of semi dried tomatoes


Method

  1. Preheat oven to 185°C
  2. Use a stick mixer to blend 5 eggs, 100ml milk and a big pinch of salt. Blend until smooth and set aside
  3. Oil a 24cm Naked Pan cast iron fry pan and put on very low heat
  4. Cover the bottom of the pan with one layer of sliced cooked potato & add a layer of caramelised onion
  5. Use remaining potatoes to create another layer
  6. Sprinkle a handful of rocket over the potato
  7. Poor egg mixture evenly around pan allowing approx. 1cm from top of pan
  8. Arrange the 8 semi dried tomatoes at even intervals on top
  9. Cook the frittata at a low heat on the stovetop until cooked half way through approx 12 mins
  10. Transfer cast iron pan to oven and cook further until completely set. Depending on your oven approx. 15 mins
  11. Let cool in pan for 5 min

  1. See separate recipe for caramelized onions, Serve hot, room temperature of chilled the next day
