A hearty soup with an Asian flair. Perfect for a cold winter's night.
Coconut Chicken Soup
Ingredients
750ml chicken stock
2 kaffir lime leaves
1 tbsp Gourmet Garden Chilli
1 tbsp Gourmet Garden Garlic
600g chicken breast, thinly sliced
100g shittake mushrooms, finely sliced
227g can water chestnuts, drained & sliced
1 cup coconut milk
1 tbsp lime juice
1 tbsp fish sauce
2 tbsp grated palm sugar
1 tbsp Gourmet Garden Coriander
4 green onions, thinly sliced
2 kaffir lime leaves, finely shredded
Method
Heat chicken stock in a large saucepan. Add 2 kaffir lime leaves, Gourmet Garden Chilli and Garlic to pan. Simmer 10 minutes. Discard lime leaves
Add chicken breast, shiitake mushrooms and water chestnuts. Simmer for a further 5 minutes
Add light coconut milk, lime juice, fish sauce and palm sugar to pan. Stir to combine
Stir in Gourmet Garden Coriander. Ladle soup into serving bowls, garnish with green onions and 2 finely shredded kaffir lime leaves
