Anzac Biscuits
Ingredients
1 cup plain flour
1 cup oats
1 cup desiccated coconut
1/2 cup brown sugar
100g butter
3 tablespoons of Golden Syrup
1 teaspoon bicarbonate soda
Method
Preheat oven to 160°C fan forced function
In a large mixing bowl, mix flour, oats, coconut and brown sugar together
In a small saucepan, add the golden syrup, butter and two tablespoons of water
Heat until the mixture is melted
Stir in the bicarbonate soda
Pour over the flour mixture and mix thoroughly
Using a tablespoon of the mixture, roll it into a ball and gently flatten the biscuit batter onto a tray
Repeat with the remaining mixture
Space biscuits evenly on the tray
Bake for 10 minutes or until golden brown
