Baked Chipolatas & Balsamic Tomatoes

Ingredients

  • 12 beef chipolatas
  • 2 red onions cut into thin wedges
  • 1 tablespoons olive oil
  • 2 x 250g punnet cherry tomatoes, halved
  • 1/4 cup balsamic vinegar
  • Basil leaves
  • Crusty bread to serve


Method

  1. Preheat oven to 180°C on fan forced or fan assist cooking function
  2. Combine sausages and onions with olive oil and place in a large baking dish
  3. Season with salt and pepper
  4. Bake for 15 minutes or until sausages are golden
  5. Add cherry tomatoes and balsamic vinegar and toss gently through sausages
  6. Cook for a further 15 minutes or until tomatoes have started to break down
  7. Remove from oven, stir in basil leaves
  8. Serve with crusty bread
