Cherry Tomato, Basil & Bocconcini Pizza

Pizza Base
Ingredients
2 cups plain flour
1/2 teaspoon sugar
Pinch of salt
1x 7g dried yeast sachet
3/4 cup warm water
1 tablespoon olive oil
Method
Mix water, oil, yeast and sugar
Add the flour and salt
Mix all together
Knead until smooth on a lightly floured bench top
Roll out to desired size
You can leave until dough has risen slightly (to give a softer crust) or you can use straight away
Pizza
Ingredients
1 uncooked pizza base
1/3 cup tomato passata (tomato pasta sauce)
1/3 cup mozzarella cheese
1 punnet cherry tomatoes (halved)
6 small bocconcini halved
2 tablespoons fresh basil (basil should be torn)
Drizzle of olive oil
Fresh basil leaves to serve
Method
Preheat oven to 210°C
You can cook the pizza using the fan forced or bottom element and fan cooking function
Spread the passata over the base
Top with the mozzarella, cherry tomatoes, bocconcini and torn basil
Bake the pizza for 15 minutes or until the base is crisp and the mozzarella melts
Top with fresh basil leaves and drizzle with olive oil
