Caponata
Ingredients
1 medium eggplant (dice into 1 cm pieces)
1 red capsicum, deseeded (dice into 1 cm pieces)
1 Spanish onion (dice into 1 cm pieces)
1 tablespoon balsamic vinegar
1 tablespoon brown sugar
1 punnet of cherry tomatoes, quartered
1/4 cup olive oil
1/2 cup toasted pine nuts
Method
Preheat oven to 180°C on the Fan Forced cooking function
Lightly grease and line a baking tray with baking paper
Combine all ingredients in a large bowl and season to taste
Spread eggplant mixture evenly onto baking tray
Bake for 30 minutes, or until eggplant is starting to soften
Change function to Fan Grill to brown for a further 10 minutes
Serve with pine nuts
