Garlic and Basil Mushroom Soup

Ingredients

  • 700g Button Mushrooms
  • 1 Brown Onion
  • 2 Garlic Cloves
  • 1/4 cup Basil Leaves
  • 1 tbsp Sour cream
  • 1 /2 cups Vegetable Stock


Method

  1. Heat up a pot on the stove
  2. Finely dice the brown onion and crush the garlic. Add to the hot and saute until brown and aromatic
  3. Dice the button mushrooms and add to the pot. Allow to cook for approximately 5 minutes
  4. Add the vegetable stock and allow to simmer for 10 minutes
  5. Add the sour cream and basil leaves to the mixture and gently use a mixer to puree the ingredients together until it reaches a smooth consistency
  6. Continue to gently simmer for a further 10 minutes
  7. Serve with basil leaves
