Ribboned Zucchini and Mixed Tomato, Paprika Open Steak Sandwich

Steak Sandwich
Ingredients
1 Wholegrain, Seeded Bread roll or bread
200g Lean Eye Fillet Steak
2 Baby Beetroots
1 cup Rocket
2 Ribbons of Raw Zucchini
3 Cherry Tomatos
1/4 tsp Paprika
1/4 Avocado
Red Onion
1 tbsp Home made Tzatziki
Method
Preheat a pan. Coat the eye fillet steak in the paprika and cook to desired tenderness. Allow to rest.
Slice the roll in half and toast both sides.
Spread the homemade tzatziki on to the bread, add the sliced tomatos, avocado, ribboned zucchini and beetroot.
Gently slice the steak fillet and place on the bread stack.
Serve with rocket and cracked pepper.
Home made Tzatziki
Ingredients
1 cup Greek Yoghurt
1 Avocado
1/2 Lebanese Cucumber
1 tsp Lemon Juice
1/2 a garlic clove
Method
Finely chop avocado and cucumber.
Crush the garlic.
Place all ingredients into a bowl and mix together until combined.
