Beetroot and Avocado Salsa
Ingredients
450g can baby beetroots, drained and diced
2 ripe avocados, halved, seeded, peeled, coarsely chopped
2 tbsp coarsely chopped fresh dill
100g reduced-fat feta, crumbled
Toasted pita breads, to serve
Method
Place the beetroot, avocado, dill and half the feta in a medium bowl
Gently toss until just combined
Taste and season with salt and pepper
Spoon into a serving bowl and sprinkle with remaining feta
Serve immediately with toasted pita breads, if desired
