Crunchy Avocado and Celery Salsa

Ingredients

  • 1/4 cup slivered almonds
  • 2 celery sticks, finely chopped
  • 2 ripe avocados, halved, seeded, peeled, finely chopped
  • 2 tsp lemon juice
  • 2 tbsp coarsely chopped fresh tarragon
  • Lavash crackers, to serve


Method

  1. Place the almonds in a small frying pan over medium-low heat
  2. Brown, stirring with a wooden spoon, for 4-5 minutes or until lightly toasted
  3. Remove from heat and set aside to cool slightly. Place the almonds in a medium bowl with the celery, avocado, lemon juice and tarragon
  4. Gently toss to combine
  5. Taste and season with salt and pepper. Spoon into a serving bowl
  6. Serve immediately with lavash, if desired
