Cumin Spiced Pumpkin, Avocado Salsa

Ingredients

  • 500g butternut pumpkin , seeded, peeled, cut into 1/2 cm cubes
  • 1 tsp ground cumin
  • Olive oil spray
  • 1 ripe avocado, halved, seeded, peeled, finely chopped
  • 50g baby spinach leaves, shredded
  • Toasted Turkish bread, to serve


Method

  1. Preheat oven to 200 C
  2. Line an oven tray with baking paper
  3. Place the pumpkin in a bowl and lightly spray with oil spray. Sprinkle with cumin
  4. Gently toss to coat the pumpkin in cumin
  5. Spread onto the lined tray
  6. Bake in preheated oven for 15 minutes or until pumpkin is tender
  7. Remove from oven and set aside to cool slightly. Transfer the pumpkin to a medium bowl
  8. Add the avocado and spinach and gently toss to combine
  9. Taste and season with salt and pepper. Spoon mixture into a serving bowl
  10. Serve immediately with toasted Turkish bread, if desired


Tips & Hints

  1. One third to one half of a medium sized butternut pumpkin.
