Avo-matoes is a quick and easy snack or side which is great for busy weeknights or lazy weekend cooking using everyday ingredients found in your pantry.

Avo-Matoes

Ingredients

  • 6 medium-sized tomatoes
  • 2 avocados, peeled, pitted, and chopped
  • 1 1/2 cup grated Swiss cheese
  • 6 to 10 chopped fresh basil leaves (or 1 tbsp dried basil)
  • 1/4 tsp dried oregano


Method

  1. Wash the tomatoes and cut them in half crosswise. Place the halves, open side up, on a baking sheet
  2. In a small bowl, mash together the avocado, grated Swiss cheese, and basil.Bake tomatoes for 5 minutes or until becoming soft. Carefully remove the tomatoes from the oven
  3. Spoon the mixture on top of the tomatoes and sprinkle with oregano, serve hot
