Papparedelle Amatriciana

Ingredients

  • 400g papparedelle pasta
  • extra virgin olive oil
  • bacon rashers, finely sliced
  • 1 onion, peeled and diced
  • clove garlic, peeled and finely chopped
  • 1 red chilli, seeded and finely chopped
  • 400g canned tomatoes
  • Perfect Italiano Extra Sharp Parmesan, grated
  • chopped parsley, to garnish


Method

  1. Cook pasta until tender. Drain and set aside.
  2. While pasta is cooking, saute bacon, onion, garlic and chilli in a pan with olive oil for a few minutes until cooked. Add tomatoes and stir to combine.
  3. Add cooked pasta to pan and toss to coat with sauce.
  4. Garnish with grated Perfect Italiano Extra Sharp Parmesan and chopped parsley.


Tips & Hints

  1. Use fresh lasagne sheets and cut into thick ribbons for quick and easy pappardelle that cooks in minutes.
