Chicken Parmigiana
Ingredients
4 chicken breasts, without skin
½ cup plain flour
2 eggs, beaten
coarse dried breadcrumbs
olive oil for frying
300g Italian tomato passata sauce
225g Perfect Italiano™ 4 Cheese Melt
salt and pepper, to taste
Method
Coat the chicken in flour, then in egg, and finally in the breadcrumbs
Heat olive oil in a frying pan and brown the chicken on both sides until golden, adding extra oil as you cook the remaining chicken
Place chicken on serving plates and top with equal parts of the tomato passata sauce and Perfect Italiano 4 Cheese Melt
Place under the grill for 2 to 3 minutes or until the cheese melts
Tips & Hints
Add finely grated Perfect Italiano™ Parmesan and chopped fresh herbs to the breadcrumbs for delicious flavour.
