- 150g rocket leaves
- 1/2 cup Perfect Italiano Extra Sharp Parmesan, shaved
- 1/2 cup semi-dried tomatoes
- 1/2 cup pitted kalamata olives
- 1/3 cup balsamic dressing
- crusty bread to serve
