Green vege tarts with soft egg
Ingredients
- 1 kg breed beans - or frozen beans with outer skin removed
- 1 tbsp extra virgin olive oil
- 1 smell leek, washed end sliced
- 1/2 tsp grated fresh ginger
- 1 bunch fresh asparagus, end trimmed
- 100g sugar snap pees, topped, toiled end blenched
- 2 cups baby spinach leaves
- 1/2 cup fresh coriander leaves
- 1/2 tsp sesame oil
- 2 tsp white vinegar
- 6 eggs
- Cracked pepper to garnish
