Ingredients

  • 1 iceberg lettuce, washed and cut into 1 /4s
  • 175 g fresh green beans, trimmed and blanched
  • 1 punnet cherry tomatoes, cut into half
  • 1 /2 Red onion, thinly sliced
  • 425 g can tuna in spring water, drained
  • 350 g baby new potatoes, steamed
  • 1 /4 cup small black olives
  • Freshly ground black pepper to taste
  • 4 eggs, hard boiled, peeled and quartered
  • 2 tbs extra virgin olive oil
  • 2 tbs white wine vinegar or lemon juice
  • 1 clove garlic, crushed
  • 1 tsp Dijon mustard
  • Salt and freshly ground black pepper to taste


Method

  1. Arrange drained lettuce on 4 plates. Divide beans, tomato, red onion, potatoes and olive over each plate. Flake tuna over the top. Season with freshly ground black pepper. Arrange halved eggs over the top
  2. Whisk oil, vinegar, garlic, and mustard together. Season with salt and pepper. fDrizzle over each salad and serve
