An authentic Thai soup made easy with Thai Seasoning.

Thai Seafood Soup

Ingredients

  • 1 tbsp canola oil
  • 2 tbsp Gourmet Garden Thai Seasoning
  • 4 1/2 cup fish stock
  • 1/4 cup lime juice
  • 1 tbsp grated palm or brown sugar
  • 1 tbsp fish sauce
  • 125g punnet baby corn, sliced
  • 1 small red capsicum, sliced
  • 50g rice vermicelli noodles
  • 3 baby bok choy, quartered
  • 500g peeled medium green prawns (tails in tact)
  • 200g boneless white fish, diced


Method

  1. Heat canola oil in a large saucepan over medium heat. Add Gourmet Garden Thai Seasoning and cook for 1 minute or until fragrant
  2. Add fish stock, lime juice, grated palm (or brown) sugar and fish sauce. Bring to the boil. Reduce heat and simmer for 5 minutes
  3. Add baby corn, capsicum and rice vermicelli noodles. Simmer for 5 minutes
  4. Add baby bok choy, prawns and fish. Return to the boil and simmer for 3 minutes or until the seafood is just cooked. Serve
