An authentic Thai soup made easy with Thai Seasoning.
Thai Seafood Soup
Ingredients
1 tbsp canola oil
2 tbsp Gourmet Garden Thai Seasoning
4 1/2 cup fish stock
1/4 cup lime juice
1 tbsp grated palm or brown sugar
1 tbsp fish sauce
125g punnet baby corn, sliced
1 small red capsicum, sliced
50g rice vermicelli noodles
3 baby bok choy, quartered
500g peeled medium green prawns (tails in tact)
200g boneless white fish, diced
Method
Heat canola oil in a large saucepan over medium heat. Add Gourmet Garden Thai Seasoning and cook for 1 minute or until fragrant
Add fish stock, lime juice, grated palm (or brown) sugar and fish sauce. Bring to the boil. Reduce heat and simmer for 5 minutes
Add baby corn, capsicum and rice vermicelli noodles. Simmer for 5 minutes
Add baby bok choy, prawns and fish. Return to the boil and simmer for 3 minutes or until the seafood is just cooked. Serve
