Apple & Cinnamon Fritters
Ingredients
3 Granny Smith apples, peeled and cored
Juice of 1 lemon
1 cup plain flour
2 teaspoon bicarbonate soda
1 egg
1/4 cup caster sugar
2 teaspoons of cinnamon
Canola oil
Method
Slice the apples crossways into 1 cm thickness. Rub with lemon juice and set aside
In a mixing bowl, place flour, bicarbonate soda, egg, 1 tablespoon of sugar and 120ml of cold water and mix until smooth. Set aside
Heat oil in a heavy saucepan. (To test if oil is ready, place a piece of bread in the oil, if it turns golden in 30 seconds, then it is ready.)
Dip each apple ring into batter, shake off excess and place gently into hot oil
Cook for 2 minutes or until both sides are golden
Remove and transfer to a plate lined with paper towel to drain excess oil
Repeat until apple rings are finished
Mix the rest of the sugar with cinnamon
Toss the fritters in the cinnamon sugar until well coated
Serve with ice cream
