A fun Italian inspired chocolate dessert recipe for big kids! Contains alcohol so remember to omit when making for the little ones.
Chocolate Semi - Freddo with Tutti Frutti Marshmallows
Ingredients
200g dark chocolate (70% cocoa)
4 large eggs, separated
70 g caster sugar
100g tutti frutti marshmallows
2 tablespoons Frangelico liqueur
500ml pure cream, whipped
Method
Grease a 30cm loaf tin and line with cling film
Melt chocolate in a heat proof bowl sitting on a saucepan of simmering water
In a mixing bowl, beat the egg yolks with the sugar until it is pale and fluffy
Add the melted chocolate and continue to beat until combine
Stir in the marshmallows and Frangelico. Set aside
In another mixing bowl, whisk the egg whites until stiff peak forms
Fold the egg whites into the chocolate mixture followed by the whipped cream
Pour the semi-freddo into the lined tin and place in the freezer overnight
To serve, transfer the semi-freddo to the fridge 30 minutes before serving
