Cream of Fennel Soup with Smoked Salmon
Ingredients
1 tablespoon olive oil
2 large fennel, chopped
1/4 cup white wine
1 litre vegetable stock
1/2 cup pure cream
100g smoked salmon, sliced
Method
Heat olive oil in a saucepan on medium heat and add the fennel
Saute lightly and add the wine followed by water
Reduce to low heat and cook for 25 minutes until soft
Transfer to a blender or use a hand held mixer to blend until smooth
Just before serving, add the cream and mix again
Season with salt and pepper
Stir in the salmon and serve
