Baked Ricotta
Ingredients
500g fresh ricotta, well drained
1 egg, beaten
1/2 cup parmesan, grated
1/2 teaspoon fresh nutmeg, grated
1 teaspoon salt
Zest of 1 lemon
1 garlic, crushed
Method
Preheat oven to 200°C (traditional function) 180°C (fan forced function)
Grease a 15cm diameter ramekin
Combine ricotta, egg, parmesan nutmeg, lemon and garlic together and season with salt and pepper
Bake for 35 minutes or until golden
Serve sliced ricotta on toast with capsicum sauce
Capsicum Sauce
Ingredients
1 cup red capsicum, charred
1/4 cup olive oil
1/4 cup hazelnut
1 teaspoon cider vinegar
Method
Add the capsicum, oil, hazelnuts and vinegar in a food processor and blend until smooth
