Asparagus & Gruyere Tart

Ingredients

  • 2 sheets ready rolled puff pastry
  • 2 teaspoons of Dijon mustard
  • 1 cup grated gruyere cheese plus extra to garnish
  • 1/2 cup ricotta cheese, well drained
  • 4 eggs plus 2 yolks
  • 1/4 cup pure cream
  • 1 teaspoon salt
  • 2 bunches asparagus


Method

  1. Preheat oven to 180°C on fan forced cooking function
  2. Grease a rectangle spring form tart case
  3. Join the 2 sheets of pastry before placing over the tin. (Trim off excess pastry and freeze for later use)
  4. Refrigerate for 15 minutes
  5. Line the pastry with baking paper and then add pastry weights
  6. Blind bake in the oven for 15 minutes then remove weights and baking paper and bake for a further 10 minutes. Set aside
  7. Measure and trim the asparagus to fit across the pastry. Arrange them closely in the case
  8. In a mixing bowl combine the mustard, cheeses, eggs, cream and salt
  9. Pour egg mixture over the asparagus and top with extra gruyere cheese
  10. Bake in the middle of the oven for 30 minutes or until the filling is set and the top is golden
