Cantaloupe Fruit Salad with Vanilla Greek Yoghurt

Ingredients

  • 1 cantaloupe, (rockmelon) halved
  • 1 pink grapefruit, cut in segments
  • 1 kiwi fruit, peeled and cut into bite sizes
  • 1 cup strawberries, quartered
  • 1/4 cup mint leaves
  • 1 vanilla pod
  • 1 cup sugar
  • 75ml water
  • 2 cups Greek yoghurt


Method

  1. Make an incision in the middle of the vanilla pod. Add into a small sauce pan with sugar and water and bring to a boil. Reduce heat to simmer for 20 minutes until the liquid turns syrupy. Remove from heat and set aside to cool and remove the vanilla pod
  2. Remove the seeds from the cantaloupe and save one of the halves. Cut the skin off the other half and cut into bite sizes
  3. In a mixing bowl, add in the rockmelon, kiwifruit, grapefruit and strawberries. Tear the mint leaves into the salad and drizzle with 2 tablespoons of the vanilla syrup. Mix together and transfer to a serving bowl
  4. Mix a quarter cup of vanilla syrup with the yoghurt to serve. Store excess syrup in the fridge (for up to 2 weeks)
